Good things come in small packages, like a La Pavoni PC-16 or the Leica M7. Despite their small stature, bell and whistle void, and seemingly foible simplicity. They are remarkably efficient and well equipped to maneuver the craft at hand. To quote the great Judith Sheindlin “keep it simple stupid”. Delicious bread, sumptuous pastries, properly roasted and extracted coffee, and well orchestrated sandwiches. Top it off with a friendly and knowledgeable staff. Proof bakery gleams-wide-eyed-open-armed to the craft.
Proof bakery is small, very small. Eight hundred-ish square feet Sitting amidst Atwater village, just north of “Frogtown”. To put it in a cliche manner; over the years this area has arguably benefited residual radiation of neighboring hipsterfication. However, do not categorically generalize Proof bakery as just another hipster hang out, they would stand out in any discerning community. Sitting snug within is cognoscenti, a pop-up coffee shop that happened to serve us the best espresso of the week. Though they go hand in hand we are going to save the cognoscenti review for another time, right now the focus is on Proof bakery.
